About Chef/Owner Subash Ghimire

 Born and raised in a small town in the Himalayan country of Nepal, Chef Subash Ghimire’s culinary journey began at home, helping his mother cook over a wood fire and cultivating vegetables and grains. Experiencing electricity and gas for the first time at the age of ten, his early years were steeped in the traditional methods of cooking and agriculture.

After moving to the city for high school, Subash pursued a degree in Hotel & Catering Management with a specialisation in Culinary Arts from Kathmandu. His practical training in various hotels in Kathmandu laid the foundation for his professional career. In 2009, Subash moved to Dubai and started as a junior chef at the Park Hyatt Hotel, where he honed his skills in French and European cuisine under master French chefs. His dedication and talent led to his promotion to sous chef in late 2013, and he took on the role of a task force French sous chef, training other chefs across Africa and Asia.

In 2015, Subash joined the Palazzo Versace Hotel for its pre-opening as an outlet chef, working alongside Michelin-star chefs and learning advanced gastronomic techniques. His journey continued in Australia, where he served as the head events chef at Bendooley Estate, specialising in Functions and weddings, and later led several local restaurants as head chef.

In 2023, Chef Subash Ghimire realised his dream by opening “Monaco Bowral Restaurant,” bringing his rich culinary heritage and diverse experiences to create a unique dining destination.
